Energy Balls

These are pretty straightforward to make. You just need a food blender of some sort! The measurements are fairly rough, and you can play around with flavours by adding orange oil, trying different nuts or seeds.

Serves 12

Ingredients:

  • 100g pitted dates

  • 60g cashews (try almonds, or macadamias)

  • 40g dried strawberries (try raisons, apricots, figs or any dried fruit)

  • 1 tbsp cocoa powder

  • large scoop of desiccated coconut

Method:

  1. Put all the ingredients (except the coconut!) into a blender and blitz until smooth-ish. The cocoa powder helps the blender to blitz it all up, but makes it look dry - don’t worry, it’s still super easy to squish together.

  2. Pour the desiccated coconut into a dish or bowl.

  3. Wash your hands, and leave them wet!

  4. Scoop up a small amount of mixture and roll into a ball between your palms. I recommend keeping your hands damp so the mix doesn’t stick to you too much! The squish-ability of the mixture can be affected by the dryness of the dates and fruit. If you’re having trouble getting it to squish together, try adding a spoonful of honey, or some stickier dried fruit, such as apricots.

  5. Pop the balls into the desiccated coconut. Roll around so they get nicely covered.

  6. Enjoy! These keep really well for a week or so, just stored in an airtight container.
